Indian Food: The Superb Taste Of Chicken Biryani
Biryani is a dish that comprises of Meat and Rice, layered and cooked together with some spices… It is derived from the Persian word ‘Birian’ which means roasting before cooking.
This special tasty recipe has its origins in Persia. The story goes that the tribals and nomads carried some dried meat and rice with them while they traveled, and they layered the rice and the meat and added some dry herbs and nuts and allow it to simmer on a wood fire for for a while and then buried it in the sand for a few hours, after which the dish was deemed complete. It was a pretty simple form of cooking Biryani those days, making use of nature and her resources.
Biryani has taken many different forms since then, and gone on to become a gourmet dish, that has been evolved and fine-tuned to such an extent, that now one comes across at least 50 varieties of Biryanis. I may be wrong there, as the number may be greater.
Biryani has meat and rice as its important ingredients. The rest of the ingredients, differ based on the variety and style of the Biryani being prepared.
Hyderabad in India is considered as the Biryani capital of the world. There are mind boggling styles of Biryanis prepared here at various diners. Few of those recipes are tightly guarded by families and restaurants, as they have been handed down through numerous generations. The Mughals brought Biryani with them when they invaded India. It is one of the many influences that came to India with the Mughals and became extremely well-liked here and with time have further evolved. It also took on some local flavors to suit the spice loving Indians.
A great Biryani consists of nicely cooked meat and the right mix of herbs and spices, cooked along with rice. The meat and rice is never mixed while cooking. They’re both cooked independently. The final phase of the preparation consists of layering the two alternatively and usually cooked either in an oven or on conventional wood fire, utilizing low heat.
